Quick and easy quiche

Justine Orme shares her secrets for a tasty, nutritious and easy quiche

To make this quiche you can either go vegetarian or meat lovers. Use up cold cuts or bacon and add whatever leftovers you have in the fridge.

Ingredients:
8 slices of bacon or left over cold cuts 2 tblspns melted butter
125g grated cheese 4 beaten eggs
¼ fine chopped onion salt & pepper for seasoning
½ cup plain flour 1 tspn baking powder
1 ½ cups milk
2 – 4 tblspns "Dining Alfresco Tamarillo, Orange & Apple Dip"

  • Cook bacon until crumbly.
  • Grease a 23 cm pie plate with the butter and line the bottom of the pan with the crumbled bacon.
  • Spoon the Dining Alfresco Tamarillo, Orange & Apple Dip over the bacon.
  • Combine the eggs, cheese, onion, seasonings, flour & milk, whisk together until smooth.
  • Pour into the pie pan.
  • Bake at about 180 deg for 30 minutes until set.

Serve hot or cold with the rest of the "Dining Alfresco Tamarillo", Orange & Apple Dip" on the side, together with a green tossed salad.
