Gluten free chocolate fudge brownie and choc chip cookies

There is nothing like a chocolate fudge brownie (or cookies) to earn you love and affection from family and friends – maybe even clients

Ingredients
100g cocoa
200g butter melted
2 cups sugar
1 tsp vanilla
4 eggs
1 cup gluten free flour
1 tsp gluten free baking powder
200g chocolate chips

Melt butter and add sugar and cocoa and blend until sugar has dissolved. Add the eggs and vanilla and mix well.
Add dry Ingredients and lastly chocolate chips.
Grease slice tin and spread mixture evenly into tin.
Bake at 170 degC for 30 minutes until just firm to touch.

Cool and dust with icing sugar to serve.

Gluten free flour mix
To subsititute one cup of wheat flour
use 2/3 cup rice flour and 1/3 cup potato starch or 3/4 cup rice flour and 1/4 cup cornflour.

Gluten Free Chocolate Chip Cookies

Ingredients 
3/4 cup butter softened
1 cup brown sugar
1 tsp vanilla
1 egg
2 1/4 cups gluten free flour
1/2 tsp baking soda
1 tsp baking powder
1 cup chocolate chips

Cream the butter and the sugar; add vanilla and egg and mix well. Add the dry ingredients and chocolate chips.
Roll into small balls and put onto baking tray lined with baking paper.

Bake at 170 for 15 to 20 minutes until risen and golden.
